Imagine there is a company that does to bread what Bridge does to retail? There is: La Boulangerie and its founder seek to help resuscitate the French bread business. I enjoyed reading the parallels between the bread business and our retail industry. Both have seen manufacturers encroach up the food chain closer to the end consumer.
